Healthy Dark Chocolate Banana Muffins
priss | March 17, 2012At one of our regular mommies and munchkins gatherings, I baked some dark chocolate banana muffins. The ladies loved them. Because they are soooo moist and yummy, the ladies all thought they are BAD.
Uh-uh! There’s no butter. The bananas made them moist. I didn’t even put a lot of sugar in them. In fact, the batch I made for ourselves contained absolutely NO sugar because we don’t really like sweets too much. & the bananas, once again, added enough sweetness.

Another versatile recipe you can play with! I mixed in almond flakes, sunflower seeds, chocolate chips, and coconut flakes for this batch.

Healthy Dark Chocolate Banana Muffins
Makes a dozen muffins.
Ingredients:
dark chocolate ~ 5 oz, melted
bananas ~ 3
cinnamon ~ 1 tsp
egg ~ 1
baking powder ~ 1 tsp
baking soda – 1 tsp
salt ~ 1/2 tsp
olive oil ~ 1/4 cup
all purpose white or whole wheat flour ~ 1 1/2 cup
almond flakes, sunflower seeds, flax seeds, chocolate chips, coconut flakes ~ handful
Instructions:
1. Preheat oven at 375 F.
2. Melt the chocolate on a double boiler. Let cool slightly.
3. Mash the bananas. Add in cinnamon, slightly beaten egg, olive oil and chocolate.
4. Sift all the dry ingredients and add to the wet mixture.
5. Mix just until moistened. DO NOT over-mix. Now add in the extra goodies you want in your muffins – almond flakes, sunflower seeds, flax seeds, chocolate chips, coconut flakes… anything you want! =p
6. Bake at 375 F for 20 mins or until a wooden toothpick comes out clean.
