Easy Baked Salmon with Mustard-roasted Potatoes

I’ve never prepared any salmon dishes before because I always think they’d end up being dry.  But guess what I found a recipe that works beautifully!  Delicious baked salmon with mustard-roasted organic potatoes, with green beans on the side.  MmMmMmmm so easy, so tasty, so awesome!

Easy Baked Salmon with Mustard-roasted Potatoes ~ 超簡單兼好味焗三文魚食譜
Recipe adopted from Savvy Mom

Ingredients:

salmon (I used wild salmon) ~ 4 fillets
marinade for salmon:

Dijon mustard ~ 2 tbsp
honey ~ 2 tbsp

panko (Japanese breadcrumbs) ~ 2 tbsp
chopped pasley ~ 1 tbsp
fresh ground pepper

potatoes (I used organic red potatoes) ~ 1.5 lb, wash and cut into 1″ cubes
marinade for potatoes:

grainy mustard ~ 2 tbsp
olive oil ~ 2 tbsp
salt ~ 2 tsp
fresh ground pepper ~ 1 tsp

Instructions:

1. Preheat oven to 425 F degrees.

2. Toss the potatoes with the marinade with your hand and spread them evenly on a parchment-lined baking pan.  Bake for 15 mins.

3. Prepare a separate parchment-lined baking sheet.  In a small mixing bowl combine the marinade for the salmon.   Wash and dry the salmon fillets and place them on the baking sheet.  Brush the surface of the fillets with the mixed marinade.  Sprinkle each fillet with some panko, parsley and fresh ground pepper.

4. After the potatoes have been baked for 15 mins, place the salmon in the oven on a different rack.  Cook both the salmon and potatoes for 10-15 mins.

 

That’s it!  EASY eh?  The salmon turned out to be just perfect!  We all need some omega 3.  =)
