What do you do when your beau’s away on a business trip?  You throw parties!!!!!!  XD  Invited a few friends @ work for a fun, delicious movie night!   I like to make people happy and so I gotta make sure the time my guests spend at ma party is worthwhile!  How?  Easy! Make good food !!!  =)   Stock up on your drinks (I had both white and rose wine, beer, Baileys, juice, sparkling water and pop).   Oh and have a Wii!  HAHA  =D

~*~*~ Mango & Prawn Cocktail in Jalapeño and Lime Sauce ~*~*~
Fresh jumbo prawns – deveined, washed, cooked in salted water with skin on
Ripe mango – diced
In a big bowl, mix together olive oil, jalapeño (2, de-seeded, sliced.  I tossed in a few seeds for the kick! ) lime juice (2), garlic (the more the merrier =p), red onions (finely chopped), salt & pepper.  Toss everything in the bowl so they all mix well.  Leave it in the fridge overnight.  MmMmmmMm~  The juice will be all soaked into the prawns.

~*~*~ Antipasto Platter ~*~*~
Probably the easiest item to make for a party.  Just throw whatever you like in there.
I put 2 different types of spicy salami, prosciutto, spicy turkey, olives, pickled portobello mushroom, roasted pepper, picked artichoke, along with jalapeño cheese, whole grain crackers and strawberries.  Pretty isn’t it?  Tasted awesome too!

Another great & easy recipe for a party!  Mix all ingredients you see here + cilantro, lime juice, salt and pepper!

~*~*~ Savory Quiche with Leek, Cheese, Red Pepper ~*~*~

Get the shells from any super market.  Layer cheese and red pepper in the shell, then pour in the leek mix package you can buy anywhere.  Bake at 400 F until the mixture sets.  Eat them when they are warm.  Soooo GOOOOOD!!!

~*~*~ Tomato Tarts with Prosciutto, Gruyere & Italian Spice ~*~*~
Vivi found this awesome recipe, and I think we were supposed to make it together, but she ended up making all 3 tarts on her own ’cause she wanted me to entertain the guests instead.  Soo nice of her!  & they were so good that we kept eating and I forgot to take pictures of the other 2 tarts.  HAHAHA!

~*~*~ Roast Potatoes with Garlic, Lime, Cilantro and Paprika ~*~*~
Easy!  Toss everything together and marinate.  Bake until they are done.
I love it!  It’s ma recipe too!  Tee heee~  I like using these cute little purple, red, and yellow potatoes. Pretty to look at!

~*~*~ Cheese Pastry~*~*~
Talented ViVi creatively used the one-extra sheet of puff pastry and bake these cute pockets filled with cheese and spices!

~*~*~ Lemon Mini Cheesecake with Strawberry Toppings~*~*~
Ma specialty!  It was a killer @ the party.  XD  SOOO easy to make and get a WOW factor from your guests!
