WOW! 2 years of hard work!! I finally found a fluffy bread recipe that doesn’t require me kneading like a machine! Now I can chill, do my own things when making bread, and the amazing thing is — the bread still turns out fluffy, soft, YUMMILICIOUS!!!!!
You have no idea how happy I’ve been because of this! NO IDEA!
It seriously took me 2 years… numerous failures! Tried at least 50+ recipes… Kneaded the dough till my arms (AND beau’s arms) developed good-looking biceps and triceps, yet the stupid bread still turned out to be so hard that can kill dogs when you throw it at them… Not to mention poor bo ba, bo ma, bo D and beau had been the guinea pigs for the rocks that I baked!
Yet my persistence kept me going, THANK GOD! I was determined, yet greedy at the same time. I want fluffy bread but I don’t wanna knead ’cause I’ve got no time for it! HUH? Say what? That’s impossible, people said. But I DID IT!!!! Woot woot!
Also, there’s a key success factor: I was checking out Lorraine Elliott’s Not Quite Nigella blog one night and found her recipe on Coconut Pullapart Rolls. I noticed that she uses an electric mixer with the dough hook to knead the dough. NOT by hand! I almost wanted to immediately kick maself in the butt — WAIT, my good-looking red hot electric stand mixer that beau got me also came with a dough hook!!! & I’ve been ignoring it for the longest time! Only if I knew that you could knead dough like this 2 years ago eh!!!
I’m full of joy now and would love to share the recipe with ya’ll! Let’s all eat healthy (by knowing exactly what goes into your bread), make fluffy bread and STILL got time to look pretty! Hahha!
I FEEL PRETTY!
So I tried Not Quite Nigella’s coconut rolls recipe and it turned out fantastic! I then used her recipe and created my very first easy fluffy no-knead green onion sesame rolls!


It’s really really REALLY fluffy and soft. Bo ba, bo ma, bo D and beau all said I am awesome!!! Hahaha =p

Easy Fluffy Green Onion Sesame Rolls Recipe:
Ingredients:
Dough:
milk ~ ½ cup –> I used organic milk
egg ~ 1
bread flour ~ 2 cups
salt ~ ½ tsp
butter ~ 30g OR you can use olive oil ~ 2 tbsp
sugar ~ 2 tbsp
yeast ~ 2 tbsp
Filling
green onion ~ LOTS! –> I used bo ba’s organic green onions fresh from his garden!
salt ~ 2 tbsp –> how salty you’d like is really up to you
olive oil ~ 1 tbsp
sesame oil ~ 1 tbsp
Some white sesame to garnish the top + 1 egg to brush the rolls
1. Fit the dough hook to your electric mixer. Mix all of the dough ingredients in the bowl until elastic and smooth.
2. Oil the bowl, shape the dough into a nice, smooth round ball. Cover the bowl with a damp kitchen cloth. Place in a warm place for 1-2 hours until it doubles in size. My place is usually not that warm, so my trick is to pre-heat the oven for 2-3 minutes, then turn it off and leave the bowl in there until it doubles in size.
3. Punch the dough with your fist to knock it back. Roll it into a rectangle of approximately 1/3 inch thick.
4. Spread the olive oil, sesame oil onto the dough. Add salt and green onion and spread them evenly. Roll and cut the dough into 16 pieces.
5. Grease a loaf tin with oil. Place the rolls in the pan. Cover the pan with a damp cloth again and let it rise in a warm place for approximately 30 minutes until they look snugly fitted together.
6. Now generously brush the egg onto the rolls and sprinkle sesame.
7. Bake in a 400 F oven for 30-40 minutes or until the wooden stick comes out clean.

You are done! It sounds like a long process but it’s really easy! The key thing is I don’t need to knead and I can do my own things when the dough proves. =)
My coconut rolls turned out great too! So easy to make! =D

Doesn’t matter what it is that you wanna do, DON”T GIVE UP! Be persistent, learn from the mistakes, understand why it failed the last time, pick yourself up from it, then try again!

Just made the dough, and I’m not very hopeful. It’s a big stiff lumpy mess and I’m not sure how to fix it
Hi 56dustbunny, oh no! What stage are you at right now? Did you knead by hand or using a mixer? By the sound of it it seems like the dough needs to be kneaded more until it becomes elastic. Tell me more so I can help!
Okay, so I got mad at it and threw it away and stayed mad for a bit, and then thought to myself, I’m not gonna be defeated by dough today !!!! So I thought carefully about the rules of cooking and decided that my laziness in measuring the flour by scooping it up rather than spooning the flour gently into the cup had probably accounted for my stiff dough. So I just looked at the new dough which was elastic when I mixed it ( Kitchenaid ) and it’s already doubled, so I think I’m ready to punch it ! But in a good way Lol
I’m hopeful that it’s gonna turn out great, and if it doesn’t, then the flooring I’m laying today also, will, since I know I’m pretty good at that

I tried this recipe and it came out really dry, the flour was separated and won’t form a ball. Do i add more milk? Also can i double the amount of ingredients to make a bigger batch?

Sorry to hear that the dough was way too dry when you tried it. Yes try to add more milk, but make sure you add it little by little as you mix it so it won’t be too wet. Yes you can double the amount but I’d wait till you got a hand with this recipe first. Good luck! =)

Yea you should use the baking measuring cups. Baking is science so it has to be precise for things to work, whereas cooking is a different animal. Good luck!!!
I definitely understand how you felt after failing 50x and finally made it! Congrats! i felt pretty for you…The bad news is, I’m still at failure stage. I tried baking bread many times but…my kids don’t wanna look at it. My hubby didn’t wanna say it’s no good.
But my dreams are kept alive when i saw your posts. I wanna try again!!! But before I start may I know what’s the weight of a cup of bread flour here? And is it a must to use organic milk? Can I simply scoop my son’s formula milk? hehe…What should be the temperature of the milk? I don’t have olive oil, may i use soybean oil?

Oh Justina don’t give up!!!!!!! Please give this recipe a try please! 1 cup of bread flour should be 136 g — Check this link out. No you don’t need to use organic milk. Never tried with formula milk so let me know if that works! In terms of temperature of the milk I simply use the cold milk from the fridge. No you don’t need to use olive oil. Canola oil would work. I’ve never used soybean oil….

Hi priss, i also noticed you use 1/2 cup of milk. What is 1 cup (in ml) here? And 2tbsp of yeast is quite a lot right, like 30g??

Hi, just a quick note to say I think the rolls may rise better if there is space between them. All the recipes i have ever seen instruct you to do that. I really like the idea of coconut rolls. Do you boil the milk, sugar and coconut?
Hi ya, thanks for the tip. =) Yes I cook the milk, sugar and coconut in low heat until a slightly creamy sauce. Cool it down before using it. Don’t over cook!

Thanks Karen! Yup I used active dry yeast as well. You don’t need to dissolve it in water first. Simply mix all the dough ingredients. It’ll get dissolved by the liquid (milk, eggs). Good luck!!

Thank you for this wonderful recipe! This looks absolutely heavenly so I decided to give the onion rolls a try, but I failed during the baking process ;_; How big was the rolls supposed to rise during the 30 min? Mine was snugly but the end result was pretty flat, not as fluffy as yours. I can only hope to give it more time to rise *sobs*
Hello there! Thanks for stopping by! When you did the 1st rise (step 2), did it double in size? Make sure you let it rise in a warm place. You might want to test the yeast too. If it doesn’t fluffy/foam up in a bowl of warm water after a few minutes then it’s no good.

I won’t give up *v*/ !! I just found out that my dough needed more time for the second rise, so i guess that solved the problem! Thank you for helping me out!

Hi Sooz, absolutely. Just follow the recipe except for step 1 – you knead the dough by hand until elastic and smooth. Hope it’ll work out for ya! =)

I have tried the fluffy green onion last night, it taste really good but not the same as you do. The dough don’t rise that much and not that fluffy, a little bit dry and I add some more olive oil.
Question: Do I need to use warm milk so the dough will rise better?

Thanks for trying out the recipe and I’m glad you liked the taste! Ah baking is science. Every little step adds its part to the end result. Couple of things to check. Make sure the yeast is still good – soak them in water and they must fluff up after 10 minutes or so. Make sure the dough doubles in size – if it doesn’t you are pretty much guaranteed that the bread won’t be fluffy and soft. Make sure the temperature is warm enough for the dough to rise. As for the milk, I didn’t use warm milk, though some recipes do call for warm milk. Give it a try! I hope it’ll work out for ya next time!!! =D
